Kathryn Marie Eddingsaas, RD, CD,CEO

Kathryn's journey as a registered dietitian began after struggling with an eating disorder that started in 2015. Looking back, she stated that her eating disorder thrived on her innocent misconception of health and health standards. She was convinced that there was no such thing as "too healthy". However, her dietitian during treatment taught her that too much of anything can be a bad thing.

After restricting herself from the foods she loved for so long, it felt incredibly freeing to finally listen to her body and to eat whenever she felt hungry. However, she emphasized that it was not a flawless recovery. The weight fluctuations, bloating, and body dysmorphia almost convinced her to stop choosing recovery. What changed was:

  • She had completely transformed her view of what wellness looked like

  • She learned that no body size that we obtain (while restricting) is going to help our health and longevity.

  • Without working on our mental, spiritual, emotional, and intellectual health, we will never learn to love or respect ourselves or our bodies, no matter what the scale or BMI says.  â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹

After a long recovery process, She went to college at Mount Mary University for Dietetics in hopes to inspire people the way her registered dietitian inspired her. She studied from 2017-2021 and graduated with a Bachelor's of Science degree in Dietetics.  She completed 1200 hours of supervised practice while interning full-time at businesses including: Aurora Psychiatric Hospital, Froedert Hospital, Treo Wellness, and Milwaukee Center for Independence. Shortly after graduating, she started designing Simple City Wellness and this website to begin sharing what she learned with the world.  

 

Next, she passed the national registered dietitian exam and became certified in Wisconsin where she currently lives and works as a dietitian at Rogers Behavioral Health. Currently, she works on residential programs with children 8-13 years old (OCD) and adolescents 14-18 years old (anxiety and depression). Her overall experience from both college and working in behavioral health includes majority of the clinically diagnosed eating disorders (AN,BN, BED, OSFED, ARFID, PICA, UFED), as well as non-diagnosed disordered eating, malnutrition, obesity and weight management, diabetes, etc.

Aside from disease prevention and health promotion, Kathryn believes that all people can benefit from having access to evidenced-based nutrition sources. She stated that after all, there are many of us suffering from eating disorders and toxic health journey's because of misinformation, diet culture, and  extremely misleading health standards. In recent years, over the Covid-19 pandemic, eating disorder behaviors (including social isolation and caloric restriction) have continued to climb. Simple City Wellness was created shortly after the beginning of the pandemic in 2021 to provide accessible, affordable, evidenced-based information to the public at large. Simple City Wellness plans on continuing to provide free evidenced-based nutrition blogs and resources, while also initiating 1:1 care virtually to reach a larger audience. ​
